Storing Pāua

Whole Pāua:

  • Keep pāua in the fridge, unshucked, for up to 48 hours. Clean them and store them in a cool, damp environment, like on a tray covered with a damp tea towel or in an airtight container. Remember to drain any juices from the tray to keep them clean.

Shucked Pāua:

  • Suck them when they arrive — clean, pat dry and place it in an airtight container and refrigerate for up to 3 days.

  • For longer storage, pāua meat freezes well. Clean, shuck and freeze whole or mince, vacuum seal and freeze.
    PRO TIP: If you want to keep whole - wrap it tightly to avoid freezer burn and store for up to 3 months.
